Tamale Pie ala Kranky Krone

tamale pie

1 pound ground beef or buffalo
1 or 2 onions
1 garlic clove, chopped
large green/red bell pepper
2 cans tomato sauce     (this time it was the tomato sauce with garlic and onion in it)
1 cup water
1 tsp or more of salt
coarse ground pepper
2T chili powder
1T black cumin seed(optional)
1 tube of polenta, cut into slices
1 can corn, drained or bag of frozen corn
1 can of olives sliced
2 cups grated cheddar cheese

Meat in olive oil if needed, add onion and bell pepper, cook till

Tomato sauce and water, chili powder and cumin seed and salt
and black pepper, with corn and olives

Simmer: for a bit

Grease or spray with olive oil spray, long baking pan/dish. Add the meat mixture and then sprinkle the cheddar cheese over it.
Arrange the slices of polenta over all.

NOTE: using the polenta this way, you won't have the corn mixture mixing with the meat. I used the long pan but with only 1 pound of meat and these ingredients it spreads pretty thin, if you put this in a smaller pan, you will have a meatier meal and perhaps cut the polenta into thicker slices.

Bake at 375 for 30 minutes, then add a bit of the shredded cheese and bake about 5 more minutes.
