I had not made Scalloped Potatoes in literally years but have
had this craving for them lately. I was trying to remember how
I even did this, how much of what to put into them! So I google
searched it and got some great ideas but added my own 'twist'
to them.
Ingredients:
potatoes/thinly sliced of what kind, your choice
1/2 or 1 medium onion chopped
bacon cut up into small bits(I get natural, uncured bacon myself)
flour (I use organic)
salt (sea salt)
pepper
Smoked Paprika
cheddar cheese (or other types) 1 1/2 cups (also I get organic)
milk (heated up)(organic,no hormone stuff)
butter (several bits cut up, about 3 T)(real butter,
organic, not that fake stuff)
Heat oven to 375 degrees, I used a 13x9 inch pan but
that would depend upon how much you are making. I
sprayed the pan with Olive Oil spray
This takes a lot of prep time, slicing up the potatoes but
I sliced up the bacon first to get that cooking, and the onions
that went in after the bacon was crisp, so that was all ready
to go.
Then I sliced up the potatoes, by hand, I leave the skins
on and they are scrubbed good but that is your choice. I put
that all in a bowl to grab out of when assembling the dish.
Then the cheese was all shredded, ready also. I
put the milk in a saucepan at this time on medium so as not
to burn it but get it nicely warm. That helps in the cooking
time so it is not cold to start with.
Assembling: I did two layers but some recipes call for one
or even three, I did have a bit of potatoes left over which
I just froze up for future use.
I lined up rows of the sliced potatoes as you can see,
like little dominos leaning on each other. Then I sprinkled
a little salt, pepper and Smoked Paprika on that. Then came
the bits of cooked bacon and onion (which I had drained of
oil very well before hand). Next, the pats of butter, sprinkled
a bit of flour over that, then half of the warmed milk and
then cheddar cheese.
Then I did the next layer the same way. I sprinkled more of
the Smoked Paprika on top for more flavor. Then I covered it
with foil and put into the oven for 30 minutes, then took off
the foil and heated further for 15 minutes, it turned out just
right!
I noticed in some people's recipes, they make a white sauce
with the ingredients in it and pour that all over the potatoes
and that is probably just as good, I just have always done
it this way and maybe next time I will try it the other way.
It is soooo yummy, I have to admit we just kept sampling it
until I had to cover it up and put it in the frig for another
night! Then I just put a bit of water into the pan and popped
back into the oven, covered, on low, starting at 200 and working
up to 300, checking to see if it was hot, not wanting to burn
it and then we got to have our way with it again!....and just
as yummy as the night before!
